In Harry Potter: Wizards Unite, you have two different types of names. These are your username, which you appear to friends as. Then there is your full name which consists of a First and Last name, which Niantic claims to keep private.
Really, I don’t know why they need all this information, it’s not necessary to play the game, so I recommend using something other than your real name. Anyhow, you can change your full name at any time, but not your username by the looks of it.

Changing Your Name
First off, you will need to open up your Ministry ID. To do this, press the wizard icon located in the bottom left corner of the game screen.
You will be taken to the Ministry ID Screen. Here, you can configure your character by taking a picture, choosing titles, registering your wand and changing your name. Select the feather icon in the top right corner next to ‘Name’.
Now all you have to do is choose a new First name and Last name and save your changes. You can come back here and change these settings whenever you want.
